Chicken Ularthiyathu (Chicken Stir-Fry)

Hi friends,
Chicken Ularthiyathu is a kerala special preparation with coconut and various spices.Enjoy cooking...
Ingredients:
Boned Chicken : 1 1/2kg
Onion : 5no(Sliced)
Grated Coconut : 1 cup
Ginger : 5 medium pieces
Garlic : 20 no
Coriander Powder : 4tsp
Chilli powder : 6Tsp
Garam Masala : 3tsp 
Black pepper powder : 1 1/2 tsp
Turmeric Powder : 1/2tsp
Fenugreek Powder : 1 pinch
Salt : As reqd.


Preparation :
Marinate the chicken with 4tsp chilli powder,2tsp coriander powder,1/2tsp turmeric powder,1 pinch fenugreek powder,11/2 tsp garam masala & salt,for min.30 minutes.




Mix grated coconut,onions,ginger,garlic,chilli powder,coriander powder,pepper powder,garam masala & salt in a bowl.Transfer this to a blender and pulse it for 3 - 4 times(It should not be ground to a paste,we want everything to just blend to finer form).Add this to the chicken and mix well.
Heat 2Tsp oil in a heavy bottomed pan and add the marinated chicken mix and cook this in a medium heat covered until the chicken start to ooze out water.Add 2-3 tsp oil and roast the chicken until it fetches a reddish brown to dark brown colour.Stir in between and this will take about 45 - 50 minutes.Once they have attained the colour,switch off the flame.



Serve it with rice/chappathi/nan.
