Idichakka Thoran (Kerala Style)/Tender Young Green Jack Fruit Thoran

We can prepare a very different recipe,ie Idichakka Thoran / Tender Green jack Fruit Thoran.


Ingredients :
Tender Jack Fruit (Idichakka) : 1/2 kg(Chopped into fine pieces)
Green Chillies : 10 no.
Turmeric Powder :  1/2 tsp
Salt : As reqd.
Garlic : 3-4 no
Grated Coconut : 1/2 Cup
Mustard Seeds : 1 tsp
Cumin Seeds : 1/4 tsp
Dry Red Chilies : 3-4 no


Preparation of Idichakka Thoran :-
  • Grind the coconut with green chillies,turmeric powder,garlic,cumin seeds.
  • Cook the jack fruit(it will take max. 10 to 15 min) and mash the pieces.
  • Heat oil in a a pan.
  • Add mustard seeds,when it splutter,add red chillies & curry leaves.
  • Add the mashed jack fruit and the ground coconut mixture,mix it well.
  • Cover the pan and allow it to cook for 15 min.(Remember the jack fruit is already cooked)
  • Serve it with rice.

Mouthwatering Strawberry Pudding

Summer came after the horrible windy winter."WOW",now we can celebrate our hottest days with ice creams/puddings.

Don't you just love strawberries???I could eat them each n everyday!!! :)
Strawberries are naturally high in fibre,vitamin C,Potassium & antioxidants.If it isn't just for enjoyment,now you have lot of reasons to love & eat strawberries.


Ingredients:
Strawberry : 1 cup
Sugar : 1 cup(to taste)
Whipping cream : 1 cup
Egg white : 2
Jalatine : 1 Tsp
Hot Water : 4/3 cup
Cold water : 1/4 cup


Directions:

  • Clean & crush the berries.
  • Add sugar into the crushed strawberries and mix it well.Don't forget to keep it in the fridge.
  • Add cold water into the jalatine and wait for at least 5 - 10 min.later add hot water into it.
  • Take the strawberry mixture from the fridge and add jalatine into it and mix it well,again keep it in the fridge for 20 to 25 minutes.

  • Now its the time to use whipping cream(frozen/powder:mix with water).I used frozen whipping cream (whip the cream for 1-2 minutes)
  • Now we can add the strawberry mixture into the whipping cream and mix it well.It looks light pink in colour.

  • Finally,whip the egg whites and mix it the above mixture(mix it for 10 minutes).
  • Keep it in the freezer for 30 minutes/fridge for 2-3 hours.
  • Now our pudding is ready,you can decorate as your wish.

Actually I'm not too fond of cooking always stick to easy recipes.(If I can do them,anyone can!!!)Try it and share your feedback.

Stuffed Potato Patties

Hi friends,
I felt bored today,so thought of trying a new recipe.Like any other educated person I did 'Gooling' He He!!! I found some nice recipes,and at last I selected a patties among them.I did prepare the recipe ,trust me it has lips licking taste. Now I will explain how to make 'STUFFED POTATO PATTIES'.It's a non veg snack.I have used non veg filling for the patties.But vegetarians can use veg filling instead of this non veg filling.
Ingredients for patties:-
Potato : 2 no
Egg : 1 no
Plain Flour : 1/2 to 4/3 cup
Salt : As reqd.
Pepper Pwdr : 4/3 tsp


Ingredients for stuffing:
Beef : 1cup(minced & roasted)
Onion : 1 no(sliced)
Oil : 1/4 cup
Garlic : 1 Tsp(sliced)
Tomato ketchup/Tomato sauce : 1-2 Tsp
Garam masala Pwdr : 1/2 tsp
Pepper powder : 1/2 tsp
Chilli powder : 1 tsp 
Coriander powder : 4/3 tsp
Coriander leaves : 2 Tsp
Salt : As reqd
Plain Flour : 1 cup


Preparation:
  • Peel & slice the potatoes,cook them in a boiling water till they are soft.Mash them and add egg,salt & pepper(4/3 tsp) into it and mix it.
  • Add plain four into the above mixture and mix it well.
  • When the oil is hot add ginger,sliced onion (after 2 min),one cup of beef,chilli powder,pepper powder,coriander powder & garam masala mix it for 2- 3 min.Add tomato ketchup,salt & coriander leaves into the mixture Coriander leaves makes the mixture colourful.cook it for max.5 min.
  • Take 1 or 2 Tsp of mashed potato mixture and put into your hand,and make a cup with the mashed potato.
  • Now take 1 or 2 tsp of meat mixture and pat it down into the cup & close it.Keep it like a ball.
  • Roll the balls in the plain flour & flatten them slightly.Allow it to set for 10 to 15 min.
  • Fry(shallow fry) the patties in hot oil,but only turn them over  once because they do tend to fall apart.fry it till both the sides of the patties look brown.
The spicy stuffed potato patties is now ready to serve.
It's a good evening snack with coffee/tea :) :)

Hyderabadi Chicken Biriyani

Biriyani is the most popular dish in hyderabad.Hyderabadi biriyani is cooked in air tight pot on very low flame so it called as Dum biriyani.
Ingredients:-
Chicken : 1kg (With bone)
Basmathi rice : 3 cup
Turmeric Powder : 1/2 tsp
Chilli Powder : 5 tsp
Green Chillies : 4 no.
Yogurt : 1/2 cup
Big Lemon : 2 no (take the juice)
Salt : 2 1/2 tsp
Ginger & garlic paste : 3 tsp
Garam Masala : 2 tsp
Coriander leaves : 5 no.
Red orange colour : 1/2 tsp
Mix all the above ingredients and marinate the chicken for 2-3 hours.
Thin sliced onion : 4 no
Cashew nuts : 100 gm
Cloves : 4 -5 no
Pepper : 6-7 no
cardamom : 5-6 no
Saffron : 2-3
  • Heat about 100 ml of oil and roast cloves,cardamom,mint leaves.Add sliced onion and wait till the onion turns brown colour,now add marinated chicken into it and cook it for 15 to 20 minutes.The chicken should not cook fully(max 1/2 / 3/4 cooked).
  • We can cook the biriyani rice meantime.Add water & 2 spoons of salt into it.The amount of water depends on the kind of rice which you have taken for the preparation of biriyani.take the half boiled rice and drain it and keep it in a plate.
  • Heat oil/butter and fry the cashew nuts.
  • Take a heavy wok and ghee.Make a layer of rice at the bottom and above that 1/4 of the chicken.Sprinkle coriander leaves,roasted cashew nuts & lime juice.
  • Make such 2-3 layers of rice followed by chicken mixture.Top layer should be of a rice.
  • Sprinkle saffron milk on the top of it.
  • Cover the wok tightly and cook on a low flame it for 20-30 minutes till the rice is done.Let it set for 10 to 15 minutes before opening it.
  • Serve it with hot raita/salad/pickle.

Chicken Ularthiyathu (Chicken Stir-Fry)

Hi friends,
Chicken Ularthiyathu is a kerala special preparation with coconut and various spices.Enjoy cooking...
Ingredients:
Boned Chicken : 1 1/2kg
Onion : 5no(Sliced)
Grated Coconut : 1 cup
Ginger : 5 medium pieces
Garlic : 20 no
Coriander Powder : 4tsp
Chilli powder : 6Tsp
Garam Masala : 3tsp 
Black pepper powder : 1 1/2 tsp
Turmeric Powder : 1/2tsp
Fenugreek Powder : 1 pinch
Salt : As reqd.


Preparation :
Marinate the chicken with 4tsp chilli powder,2tsp coriander powder,1/2tsp turmeric powder,1 pinch fenugreek powder,11/2 tsp garam masala & salt,for min.30 minutes.




Mix grated coconut,onions,ginger,garlic,chilli powder,coriander powder,pepper powder,garam masala & salt in a bowl.Transfer this to a blender and pulse it for 3 - 4 times(It should not be ground to a paste,we want everything to just blend to finer form).Add this to the chicken and mix well.
Heat 2Tsp oil in a heavy bottomed pan and add the marinated chicken mix and cook this in a medium heat covered until the chicken start to ooze out water.Add 2-3 tsp oil and roast the chicken until it fetches a reddish brown to dark brown colour.Stir in between and this will take about 45 - 50 minutes.Once they have attained the colour,switch off the flame.



Serve it with rice/chappathi/nan.

Bread Pudding

Hi Everybody,

Today morning onwards I was searching for a different recipe,at last I have got an idea about pudding.We all can see various kinds of pudding,majority of us love to have the 'YUMMY YUMMY' Pudding after a delicious lunch/dinner.I wasn't keen to prepare recipes before when I was in India.But when I landed in London,I felt like I'm in a country where people don't wanna waste their valuable time,I can see people they are busy with reading books or newspapers even in their journey to office in the over crowded trains/buses.That made me look back and think something creatively and then reached the 'World Of Taste'.Why don't you prepare pudding in your kitchen,let us try, bread pudding..join with me...

Ingredients for our yummy yummy bread pudding :

Sandwich Bread : 10 Slices



Mixed Fruit Jam : As reqd.(Yo can try any jam with bread,I have chosen Mixed fruit jam)
Milk : 3 cup
Vanilla Essence : 1tsp
Egg : 3 no.
Sugar : 1 cup.
Ghee : 50 mg.


Method : 
Spread a layer of jam on each slice of bread,cut it into small square pieces.Repeat the same with other 9 slices of bread.





Lightly apply ghee inside the glass bowl(oven proved) and put all bread pieces into the bowl.Boil 3 cup of milk and add 4/3 kg of sugar into the boiled milk.Separate the white & yellow portion of the eggs,add the yellow portion into the milk and mix it well.Finally add 1tsp vanilla essence into the mixture.




Pour this mixture slowly over the top of the bread holding bread down with whisk so that it absorbs the mixture.Leave it for 10 minutes.




Cook it in oven at 180 to 200 degrees for 40 to 45 minutes.Pudding may take a little longer depending on the type of oven you are using.
Prepare a meringue with the white portion of the egg,now the topping is also ready.Apply the meringue on the top of the pudding and again cook it in oven for 10 to 15 minutes at 180 degrees.
Our delicious bread pudding is ready now.



On the top of that you may like to add a couple of strawberries/grapes/blackberries or any berries you like!!!
We can keep it in fridge for couple of days.
Don't forget if you prefer,you can use any other jam.

Varutha Meen Curry (Fried Fish Curry)



We can try a non veg-recipe today..
What we need :
Fish : 2 no
Turmeric Powder : 1/4 tsp
Chilly powder : 1.5 tsp
Salt : As reqd.
Mustard Seeds : 1/2 tsp
Onion : 2 no(sliced)
Ginger : 1 Tsp
Green Chilly : 2 no(sliced)
Coconut Oil : 2Tsp
Coconut Milk Powder : 50gm
Water : 2 cup
Vinegar : 1Tsp
Ingredients for grinding :
Garlic : 4 no
Small Onion : 4 no
Chilly Powder : 1/2tsp
Coriander Powder : 1.5Tsp
Pepper Powder : 4/3 tsp


Preparation of Varutha Meen Curry/Fried Fish Curry :
1)Clean fish,wash & drain well.




2)Mix chilli powder,salt & turmeric powder and make it as a paste.
3)Smear it over the fish.Set aside for 30 minutes.




4)Heat oil in a shallow fry pan & fry fish.




5)Add mustard seeds and when they crackle  add curry leaves & green chilly,ginger,sliced onion.Saute it until onions get transparent.
6)Add the grind mixture into it.Add coconut milk and mix it well.
7)When it boil add fried fish into the curry and finally add 1tsp of vinegar into it & make the gravy thick.




Now we prepared a spicy fried fish curry,we can serve the curry with rice/appam/puttu.
